A Christmas classic, French toast takes on different versions and names depending on the country or tradition of the house where you eat.
Learn how to make two, the Fabrique bakery and the Cantaloup restaurant, both from São Paulo.
French toast
By José Carlos Gomes, head baker at Fabrique Pães
Ingredients
2 slices of soft bread, like brioche
More refreshing fruit slices, such as orange, kiwi, strawberry and pineapple
Maple syrup (maple syrup)
Cream
For the cream
100 ml of fresh cream
50 ml whole milk
50 g sugar
2 eggs
Whisk in all the ingredients until creamy
Preparation mode
Dip the slices of bread in the cream, leaving a few minutes for the mixture to be well absorbed
Brown the bread on a plate or a heated pan in butter
Assemble on the plate and add the maple syrup to the already browned bread; sprinkle with sugar
Add fruit slices without syrup – creating a contrast between the citrus flavor of the fruit and the sweetness of the brioche
