Fish, molluscs, octopus and fish star in a new wave of sandwiches in São Paulo – 01/14/2021 – Sweets

Instead of a burger, an octopus. Instead of sausages, mussels. Opened last year, two São Paulo snack bars draw attention for the breeding of fish and seafood to the protagonists of their sandwiches and snacks menus.

Opened in June, Notorious Fish is dark cuisine – meaning it only exists on delivery – that seeks to combine respect for fish with snacks with more user-friendly value.

Younger sister of star Barú Marisqueria, Barú Sandú follows a similar line. It only works with delivery, with a focus on sandwiches and similar values.

The addresses complete a list of ten recipe suggestions to taste by hand and featuring fish.

Barú Sandú
Open at the end of October, the cafeteria follows the line of the oldest Barú Marisqueria, with a kitchen by Dagoberto Torres and dedicated to fish. The difference is that there the ingredients serve as a filling for the sandwiches, as is the case with La Milanga (R $ 33), a fish milanesa with kimchi and coleslaw with cilantro. In turn, La Niña (R $ 27) also brings an element of the earth: it combines marinated mussels and cured ham with roasted garlic cream and olives.

Gonzales Wisdom
The home of Bolivian chef Checho Gonzales at the Mercado de Pinheiros also delivers his ceviches and snacks to the house. A novelty at the beginning of 2021 is the return of the fish sandwich, with fillet of yellow breaded hake, egg cream and cucumber pickles in brioche (R $ 29).

Così
One of the pioneers of Santa Cecília, the restaurant moved to a larger house in the Gardens area during the last month of November. Commissioned by Renato Carioni, the place has kept the menu of the contemporary Italian imprint. Among the firsts of the new address is the lobster roll – lobster sandwich served in a pumpkin brioche, at R $ 71 with four units.

Strain
In Tatuapé, Chef Lucas Dante’s home combines the seasonal menu and a good selection of wines, with an emphasis on natural and organic labels. The restaurant kicked off this year with something new on the menu, one with a touch of the sea. It’s octopus toast with tomato, plus gochujang pepper mayonnaise and ikura (eggs).

Fat cow
The Itaim Bibi cafeteria is truly gourmet, in the best sense of the word. Under the leadership of Luiz Filipe Souza, Evvai, and Fabio Moon, he brings burgers and snacks that explore techniques and ingredients. One starter that appears on the menu is Takoxinha – takô, in Japanese, means octopus. For R $ 21, two units are consumed.

Matilda Lanches
Under the orders of chef Renata Vanzetto, the cafeteria has units in Pinheiros and in the Gardens region. Among the menu options, one of the highlights is the snack called Meg Fish, a crunchy fish sandwich, tartar sauce with a light touch of wasabi and pickles, on brioche bread. The sandwich costs R $ 33.

Notorious fish
This dark kitchen was opened in June, dedicated to fish sandwiches and snacks. The menu has suggestions such as the Shrimp Roll, which takes shrimp with mayonnaise, chives, crispy leeks in brioche and costs R $ 32 with two units. Filet-O-Fish, meanwhile, is inspired by the late Mc Fish (R $ 25). Until the end of January there is a special snack, Choripolvo, stuffed with a tentacle (R $ 48).

Royal duck
The cold brew coffee, the cold extract coffee, moved to a bigger address, also in Pinheiros, at the end of the year. With the change, he expanded the menu and made Japanese inspiration even more important.
