One of the most important awards in gastronomy, the expected list of the 50 best in the world was one of the many activities affected by the novel coronavirus pandemic and has seen its edition postponed until 2021.

Published by the British William Reed Business Media and launched in 2002, the world ranking also has continental versions – Asian and Latin American, launched in 2013. Since 2009 there is also an ethical, the 50 best bars in the world.

If the announcement of the main prize was postponed, that of the Latin regional arm was maintained. The disclosure of the 50 best Latin American restaurants, along with the 50 best restaurants in the region, took place this Thursday (3), as part of an event with online transmission. And with good news for the Brazilians: some of the houses present have improved their balance sheet.

The biggest consecration, once again, was for A Casa do Porco, which dropped from 6th to 4th position. In addition, we have won another representative on the list, with the debut of the Corrutela de São Paulo, 50th.

Corrutela (50 °)
First in the ranking, the restaurant of chef César Costa combines signature cuisine with a sustainable project. It is the first in Latin America to receive a top rating from the Sustainable Restaurants Association, an English NGO that tackles complex issues of the food system, guides and certifies homes around the world. The menu is seasonal and features dishes such as all four varieties of grilled zucchini, with pumpkin seeds, kefir yogurt, lemon, and mint. (R $ 38). The tasting has eight stages and costs R $ 185 per person.

Mocotó (33rd)
The house managed by Rodrigo Oliveira has gained ten positions in the ranking compared to 2019. The space is known for the traditional cuisine of the Northeast and for the friendly prices. Among the dishes, diced tapioca (R $ 18.90, with six) are famous – a recipe popularized by them, by the way. But it also has cracklings (R $ 11.90, each), baião de j’ai (from R $ 21.90), green beans (made with pickle, chayote, pumpkin and okra; from R $ 21,90) and more.

Evvai (26th)
In 2017, Luiz Filipe Souza took over the kitchen that had been his tutor, the Italian Salvatore Loi, and opened Evvai. And since then it has attracted attention – the house debuted at the 50 Best Latin in 2019, in position 40. In an elegant atmosphere, Souza presents dishes that are Italian-based, but authoritative and highlighting national ingredients. You can discover the cuisine of the house through the tasting menu in 12 stages (R $ 421) or à la carte. If you choose the latter, the tip is the fregola, pasta cooked in scallop broth, smoked butter mantecata, grilled octopus and scallops (R $ 95).

Maní (23rd)
Contemporary cuisine made with Brazilian ingredients by chef Helena Rizzo is present year after year on the Latin American list – in 2019, Maní was in 18th place. To know the chef’s work, the trick is the tasting menu (R $ 410, in ten stages), which has gained new dishes with the reopening of the house after quarantine, in which case it combines native oyster, zucchini, serum. yogurt, elderflower, lemon-caviar. The a la carte menu also has some new additions, with a focus on fish on the banana leaf, with uarini flour, coconut, plantain sauce, and tucupi and pepper (R $ 98).

DOM (13th)
It was Alex Atala who put Brazil on the global gastronomic map, bringing regional ingredients and techniques, especially indigenous ones, and combining them with his luggage in international cuisine, like his famous aligot, a puree of French cheese potato. The house reopened in September to serve 14-step tasting menus – fees cost R $ 640 or R $ 990, with harmonization.

The pig house (4th)
If in 2019 Casa do Porco was 6th in the local ranking, this year it reached the top 5 – in addition, of course, to retain the title of best restaurant in Brazil, according to 50 Best. The couple in charge of the place, Jefferson and Janaína Rueda, helped turn the brainstorming between Copan and Minhocão into one of the most populous areas to eat in the capital: besides A Casa do Porco, there is Bar da Dona Onça , the hot pork and ice cream snack bar. In fact, Janaina also received this edition of the award with the American Express Icon Awards. With eight stages, the tasting menu costs R $ 135. In a la carte mode, the tip is San Zé pork (R $ 65), with three classic side dishes or three seasonal options, which come straight from the family site.
