Far beyond classic foreign ingredients such as lemon, pomegranate and red berries, the country’s cocktail goes through a process of reinvention and leveraging flavors easy to find in Brazil.

Instead of vanilla, bartenders are betting on coumaru, an aromatic seed that has been nicknamed Brazilian vanilla. At Mena Gastrobar, this is the drink that brings the Cora Coralina drink (R $ 23.50) to life, developed by Stephanie Marinkovic and prepared with cachaça, elderflower syrup, lemon, ginger and finished with bean shavings, which brings even more complexity.

To accompany, one of the orders is the fried oyster (R $ 6.90, the unit; or R $ 26.90, the serving with four), which come with a garlic sauce and dill pickles. red onion and lemon.

The same coumaru appears in the cocktail of the same name at Bao Bar (R $ 26), made from an infusion of the seed in shochu – a distilled drink of rice or sweet potato, typical of Japan -, combined with mate vermouth, Campari and Orange bitter.

Also thinking of summer, it is worth ordering the drink combined with the zucchini sanduba (R $ 21), a novelty on the menu that includes naturally fermented ciabatta bread, caponata zucchini, cherry tomatoes, leaves. of basil and vegan cheese.

But going to Bao and not ordering the famous Chinese roll is like not going. So try one of the tastiest versions in the house, featuring pork pancetta in soy sauce, peanut flour, and cilantro (R $ 19).

The idea is to combine the afternoon snack with Seriguela (R $ 24), a drink that takes jambu cachaça, seriguela syrup, dry vermouth, bitter orange, lemon and egg white. Harmonization is guaranteed with the pork fat and the dormancy of the jambu, ideal for traveling and getting to know the best of Brazil.
